wrapping up beehivesThe lovely fall weather has been holding perfectly and we’re just getting the last hives wrapped up this week. The bees are looking very healthy and the hives are bursting with honey. Gratefully, we had the best harvest that we’ve had in years – it almost makes up for the massive losses we experienced in the spring.
We certainly appreciate that old man winter is easing in slowly, in spite of the long range forecast which speculated that we could expect our coldest winter in 20 years! As long as there is less snow than last year, the bees should still come through healthy and happy.
The observation hive is now devoid of drones and the remaining workers look like they are taking long naps. Well deserved of course!  There are still a few persistent snapdragons, mallows and dandelions around and on the warmer days the foraging bees almost go berserk when they find them. The queen is still laying eggs, but over a much smaller area and she’ll likely call it a season within the next few weeks.

The Christmas Market season has already started and we will again be at the Millarville Christmas Market November 11, 12 and 13. Look for us in the Community Hall as in previous years. This year, King Bee Art will even make a rare appearance. If you come on Friday (hours are 10 am til 8 pm Nov 11) he will be serving up our delicious mulled mead samples.

Honey Apple Butter Buzz

Our kitchen production bee, Corinne, has been busy with 100 pounds of lovely BC Spartan apples. Those of you who have made apple butter, or had family that did, know that it is truly a labour of love. Our Honey Apple Butter Buzz not only uses our scrumptious honey instead of sugar, but a healthy amount of Melissa’s Gold mead makes it extra smooth.
For those not familiar with Apple Butter, it is similar to apple sauce but thicker and richer in flavour. What would you use it for? Well, here is a short list:

apple butterbeeSlather it on warm biscuits, muffins or toast.
beeAdd a dollop to plain yogurt, oatmeal or even cottage cheese.
beeUse it instead of dairy butter on sandwiches, especially with chicken, turkey or ham and cheddar cheese.
beeUse it as a condiment with pork or ham.
beeCreate a flavourful BBQ sauce, combining it with tomato paste, vinegar, mustard and spices.
beeAs a filling in dessert crepes, with some brie, pecans and topped with whipped cream.
beeUse it instead of oil in cake and muffin recipes.

Mead Matters

Our fall new release, ready for Remembrance Day, is our newly labeled ‘Fire’n Spice’. A tasty metheglin that embodies the best mulling spices, this mead is one to enjoy by the fireside and will keep you warm no matter what the weather. The winner of our naming contest is Erin Hussey. I’m sure she’ll find many ways to enjoy her prize – six bottles of the new mead!

Premiere Release of Chinook Arch Meadery's
"RASPBERRY ICE"

This Special Offering of “RASPBERRY ICE” is for our Newsletter Readers and Facebook Friends only. Some of you may have heard about our production of Canada’s first ever Iced Mead. “Raspberry Ice” is somewhat like an ice wine with a concentration of flavour and alcohol (19.6%), making it a lovely sipping liqueur to enjoy after dinner. We have a limited number of bottles (96 to be exact), thus it will not be on the shelf and will only be available if you mention this newsletter notice. Since there is so little to go around, quantities may be limited and it is suggested that you pre-order by calling the store (403-995-0830) or sending an email as soon as possible. Unfortunately, there will not be any available for tasting.
It is anticipated that it will be ready for sale December 2. The cost is $25 for 200 ml, and will include a certificate of authenticity and each bottle will be numbered and signed by Mazer Art Andrews.

Honey Basted Pork Roast

This recipe may seem like a lot of work but it actually comes together a lot quicker and easier than it looks. It is by far the best pork roast we’ve ever done. Pork is always great with citrus fruits but using lemon is unique and really enhances the flavour. The honey basting certainly locked in the moisture!
