  • ½ cup soft butter or oil
  • 2 eggs
  • 1 cup mashed bananas
  • ½ cup honey
  • ¼ cup plain yogurt
  • 1 tsp. baking soda
  • 5 ½ cups whole wheat flour
  • 1 cup rolled oats
  • 1 tsp. cinnamon
  • ½ cup raisins
  • ½ cup walnuts

Instructions
  1. Butter muffin cups. In a mixer bowl combine butter or oil, eggs, bananas and honey. Cream well. Add flour to creamed mixture, mixing until just blended. Stir in oats. Fill muffin cups 2/3 full of batter.
  2. Bake at 375°F (190°C) for 18 – 20 minutes. Remove from pans and cool on a wire rack.
  3. Makes 18 muffins.
