Lightly grease an 8 in. x 8 in. baking pan. Set aside. If using candied ginger, grind in a blender or food processor until finely minced. Spread nuts on a baking sheet and toast carefully in the oven for 8 to 10 minutes, or until the nuts are pale golden and give off a toasty aroma. In a heavy bottomed pan over medium heat, combine honey and sugar. (The sugar is necessary to harden the chews – use less if you want them gooey). Heat, stirring, until sugar dissolves, which will be about 8 to 10 minutes.
