  • 5 ¼ cups flour
  • 4 tsp. baking powder
  • ½ tsp. salt
  • 5 ¼ cups raisins (sultanas)
  • ½ cup cold black tea (strong)
  • 1 egg (beaten)
  • ½ cup local honey
  • Honey to glaze

Instructions
  1. Soak the raisins in the cold tea overnight. The following day, add all the remaining ingredients, mix and pour into a greased loaf tin. Bake for 45min- 1 Hr at 350F(180C), until a toothpick inserted into the middle of the cake comes out clean.
  2. Glaze the cake with more honey while still warm. To serve, slice and spread with butter or serve with a local semi-hard cheese such as Traditional Lancashire (from the British Ark of Taste.)
  3. The cake will keep for several weeks in an airtight tin.
