Soak the raisins in the cold tea overnight. The following day, add all the remaining ingredients, mix and pour into a greased loaf tin. Bake for 45min- 1 Hr at 350F(180C), until a toothpick inserted into the middle of the cake comes out clean.
Glaze the cake with more honey while still warm. To serve, slice and spread with butter or serve with a local semi-hard cheese such as Traditional Lancashire (from the British Ark of Taste.)
The cake will keep for several weeks in an airtight tin.
