  • 4 cups diced, left over turkey
  • 2 tbsp. soy sauce
  • 1 14oz. can of diced pineapple
  • 1 tbsp. vegetable oil
  • 1 tsp. grated ginger root
  • 3+ medium cloves of garlic, chopped
  • 2 tbsp. rice vinegar
  • ¼ tsp. cayenne pepper
  • 5 ½ cups cornstarch or flour
  • ½ cup traditional mead or white wine
  • 2 tbsp. honey

Instructions
  1. Marinate the turkey in 1 tbsp. (8 ml) of soy sauce for 10 minutes. Stirring to coat all of it.
  2. In a large frying pan on medium heat brown the garlic and ginger root in the vegetable oil. Add the turkey and pineapple and heat 5 to 8 minutes until it’s thoroughly warm.
  3. In a bowl combine the mead, reserved pineapple juice, remaining soy sauce, vinegar, cayenne pepper and honey.
  4. Add the cornstarch (or flour) to the liquid ingredients, blending well.
  5. Pour the liquid ingredients over the turkey mixture then stir constantly until the sauce thickens.
  6. Serve over noodles or rice, with stir fried vegetables.
